Quantity:
1 - 1.2 kg. Octopus from one of the Blue Island Fish Markets
Olive oil for greasing
1/2 cup olive oil for the sauce
Juice of 2 lemons or 4 tablespoons vinegar
Fresh oregano

Purchase the cleaned octopus from one of the Blue Island Fish Markets.

Wash and then drain the octopus on kitchen paper.

Put the whole octopus in a saucepan with enough water to cover it and cook for 40 minutes. Remove from the heat, strain and dry. When it has cooled enough, rub the octopus by hand under running water to remove the dark outer membrane. It is easily removed.

When cool, cut off the tentacles and the head to cook them. Grease the octopus or the grill with olive oil and cook for 10 to 15 minutes, testing occasionally to see if it is tender.

For the sauce: Mix the olive oil and lemon or vinegar in a blender, until thick, for a few seconds. Drizzle the octopus with the sauce, sprinkle with fresh oregano and serve.
