Ingredients

Quantity:
2 kg large fish for soup (Grouper, Dusky Grouper, Dentex or Sea Bream) from one of the Blue Island Fish Markets
3 onions, finely chopped‏
4 carrots, sliced sideways
2 celery roots, finely chopped
4 sprigs celery
3 potatoes, cut into small squares
1 1/2 cups olive oil
4 eggs (whites and yolks separate)
1-2 ‏lemons
1 tablespoon butter
Salt
Pepper

Purchase the cleaned fish from one of the Blue Island Fish Markets.

Season the fish with salt and pepper and then fry the onion in olive oil in a saucepan.

Add the fish, vegetables, salt and pepper. Cover with water and simmer for about 1¾ hours.

Squeeze the lemons and beat the egg yolks together with the salt and pepper.

Beat the egg whites until soft and fluffy (like meringue).

Add the egg yolks to the egg whites and slowly add the lemon juice, whisking the mixture constantly. The mixture must be added in small doses and be whisked to avoid curdling.

Season with salt and pepper and serve.
