2 Squid or 2 Cuttlefish from one of the Blue Island Fish Markets

500 g Mussels from one of the Blue Island Fish Markets

500 g Prawns from one of the Blue Island Fish Markets

1/2 bunch parsley

1/4 cup olive oil

2 cloves garlic

1 onion, finely chopped

2 red peppers, finely chopped

2 pinches saffron
-
1 pack of whole small tomatoes

4 cups Carolina rice
-
6 cups stock or hot water

1 bay leaf
-
2 sprigs thyme

Salt

Freshly ground pepper
Instructions
Purchase the seafood from one of the Blue Island Fish Markets.
Start the paella by heating the oil in a wide, shallow pan. Add the squid or cuttlefish and the garlic. Mix well, until they change colour. Add a bay leaf and some thyme. Add the chopped onion and peppers, and mix.
Add the saffron and season with salt and pepper. Chop up the tomatoes and add them. Add the rice and mix well. Then add the stock.
Lower the heat, leave to boil for 7-8 minutes and then lay the raw seafood (shrimp, mussels) on top. Press down the ingredients with a ladle, so that they get well soaked with the liquids.
Lower the heat to minimum and simmer for a few minutes, until the rice is cooked and the seafood has opened. The paella takes about 20 minutes to cook and is ready when the rice starts to stick to the base of the pan.
Serve hot and sprinkle with parsley.
