1.2 kg sliced Tuna from one of the Blue Island Fish Markets

1.5 kg potatoes, peeled and sliced

2 tablespoons fresh rosemary, finely chopped or 1 tablespoon dried rosemary, well crushed

1 bay leaf

4 tablespoons honey mustard

2 tablespoons lemon juice

100 ml olive oil + 2 tablespoons extra to sauté the fish

Salt

Freshly ground pepper

Instructions
Ask at one of the Blue Island Fish Markets for the fresh tuna to be sliced.
Heat 2 tablespoons of olive oil in a non-stick frying pan on a high heat and sauté the fish (in batches, if they don’t all fit together) for about 1 – 2 minutes on each side, until golden brown. Put it in a pan and sprinkle with half the amount of honey mustard.
At the same time, preheat the oven to 170°C.
Put the potatoes in a baking tray, add the bay leaf, rosemary, 2 tablespoons honey mustard, lemon, olive oil, water, season with salt and pepper and stir well.
Bake for about 45 minutes, or until the potatoes are ready.
Remove the tray from the oven, lay the fish on top of the potatoes, season with salt and pepper and continue baking for about another 15 minutes, until the fish is cooked.
