Ingredients

1 kg large Prawns, cleaned, from one of the Blue Island Fish Markets

1 tablespoon honey

1 tablespoon hot sauce

2 tablespoons fresh coriander leaves, finely chopped

2 pinches salt
Instructions
Mix the honey, hot sauce and salt in a large container. Add the prawns and turn the container upside down so they are covered in marinade.
Cover with cling film and leave at room temperature for 20 minutes or in the refrigerator for 1 hour.
Heat the grill for immediate use to 250°C.
Remove the prawns from the container and remove the leftover marinade. Put the prawns on the skewers, three prawns per skewer.
Cook the prawns with a high heat, with the lid closed as much as possible, until the surface becomes slightly firm and opaque in the middle (2 to 4 minutes, turning once).
Remove from the grill and sprinkle with the chopped coriander.
Serve hot.
Tip: This can also be done in the oven at 250°C degrees for 8 minutes.
