Ingredients

1 kg cleaned Octopus from one of the Blue Island Fish Markets

1 medium size onion, finely chopped

2 cloves garlic, finely chopped

1 cup peeled tomato, finely chopped

500 g peeled baby potatoes, whole

1/2 cup red wine

2/3 cup olive oil

1 cup water (approx.)

1 cinnamon stick

Α little salt

Instructions
Purchase the octopus from one of the Blue Island Fish Markets, cleaned and cut into thick pieces.
Wash and drain the octopus well. Then put it in a medium saucepan on a medium heat without additional water and let the natural liquid come out of the octopus. Leave to boil in the liquid. Leave over a low heat until all the liquid has been absorbed, only adding as much water as necessary for cooking. It will take about 35-40 minutes until soft.
Add the onion and garlic and, when soft, add the oil and let them sauté a little.
Douse the food with the wine and add the tomato, potatoes, cinnamon and pepper. Taste the food and, if necessary, add a minimum of salt. Pour in as much water as necessary to cover the food, cover it with a lid and let it simmer until the potatoes are tender. Check the liquid and, if necessary, add a little more water to leave some sauce at the end.
