Ingredients

1 kg squid cleaned, from one of the Blue Island Fish Markets

1 kg small onions, peeled

2 cloves garlic

2 glasses tomato, grated

1 tablespoon tomato paste

2 bay leaves

1 cup dry red wine

Salt

Pepper

Olive oil

Chopped parsley
Instructions
Wash and drain the squid.
Peel and cut the onions in half and the garlic into slices.
Fry the onions and garlic in olive oil in a saucepan. Add the squid and fry them for a while. Next, add the tomato paste and douse with the wine. Add the tomato, bay leaves, salt, pepper and cook for half an hour or so until the sauce thickens.
Garnish with finely chopped fresh parsley and serve.
