18 large prawns from one of the Blue Island Fish Markets

100 g butter

Juice of a lemon

3 tablespoons olive oil

1 teaspoon mustard

1 teaspoon hot chilli

Salt

Instructions
Purchase the cleaned prawns from one of the Blue Island Fish Markets.
Remove the shells from the prawns, keeping the tails and heads to one side. Heat the butter in a saucepan until it melts (taking care not to let it burn) and add the olive oil, lemon juice, mustard, hot chili, a little salt and pepper. Beat well with a fork.
Pack the prawns tightly in an ovenproof dish and drizzle with the butter mixture. Put them at the bottom of the refrigerator to marinate for at least 3 hours. Turn them over from time to time.
Preheat the oven to 180°C and bake the prawns for 10-15 minutes. Take them out and serve hot and, if desired, accompanied by rice.
