Ingredients

2 fresh Salmon fillets from one of the Blue Island Fish Markets

1 1/2 cups leaves of herbs of your choice (parsley, basil, mint, mint or a mixture of them)

1 clove garlic

1 tablespoon capers

3 tablespoons olive oil

Salt
-
Pepper

Wooden skewers
Instructions
Cut the salmon into 3 cm cubes, brush with olive oil (1 tablespoon) and season with salt and pepper.
Transfer to moistened skewers, and bake in the oven (grill setting) for 2 minutes on each side.
Put the herbs of your choice in a food processor, add the chopped garlic, the chopped capers and the remaining 2 tablespoons of olive oil.
Mix the ingredients a few times, on the intermittent setting, to produce a sauce resembling coarsely chopped pesto.
Serve the skewers with the sauce in a side bowl.
Serve accompanied by a tomato salad.
