Ingredients

For the salmon:

2 Fresh Salmon fillets from one of the Blue Island Fish Markets

A lemon (cut into slices)

A few sprigs of dill

Freshly ground pepper

For the herb butter

50gr. soft butter (at room temperature)

Lemon zest
-
1 tablespoon lemon juice
-
1 tablespoon dill

Salt

Freshly ground pepper
Instructions
Put the butter, lemon zest, lemon juice, dill, salt and pepper in a mixing bowl. Stir well, then empty the mixture onto a piece of cling film. Wrap it into a roll and squeeze the ends closed (it should look like a small sausage). Place in the freezer for fifteen minutes to harden and so it can be cut.
Lay out two A4-size pieces of non-stick baking paper. Put a fillet on each piece and season with salt and pepper to taste.
Cut the herb butter into slices. Place one slice on each fillet with half a slice of lemon and a sprig of dill.
Next, wrap up the baking paper to form a small packet and place in a baking tray.
Bake in a pre-heated oven at 200°C for approximately twenty minutes depending on the oven.
Serve accompanied by mashed potatoes and steamed vegetables.
