Ingredients

400 g cod fillet from one of the Blue Island Fish Markets

1 tablespoon olive oil

2 teaspoons smoked paprika

2 teaspoons dried coriander powder

2 teaspoons oregano

1 teaspoon salt
Instructions
Wash the cod and leave to drain.
Heat the olive oil in a non-stick frying pan.
Mix the paprika, coriander, oregano and salt in a bowl. Then rub the cod fillets well with this mixture.
Cook the fish for about 2-3 minutes on each side, until golden brown and cooked inside.
Serve hot. Ideal when accompanied by a salad.
