Ingredients

8 medium size Striped Red Mullet or Red Striped Mullet, cleaned, from one of the Blue Island Fish Markets

1 pack spaghetti

3 large ripe tomatoes, peeled and finely chopped

2 cloves garlic, finely chopped

2 shots Ouzo

1 teaspoon sugar or other sweetener of choice

3/4 cup olive oil

5-6 sprigs parsley, finely chopped

Salt

Instructions
Salt the fish inside and out.
Heat the olive oil in a large non-stick frying pan, add the tomato, garlic, peppercorns and sugar and with a wooden spoon stir briefly over a high heat. Add the Ouzo and allow it to evaporate.
Lower the heat, season with salt, cover with the lid and cook for 20 minutes.
While the fish are cooking, boil the spaghetti according to the instructions on the pack. As soon as it is ready, transfer them to a frying pan with a slotted spoon, add the parsley and stir well, blending the sauce nicely.
Heat a non-stick large frying pan or grill pan until very hot. Brush with olive oil and put the fishin to cook, 1 to 2 minutes on each side, over a high heat.
Serve the spaghetti with 2-3 mullet in each portion.
