Ingredients

12 large Prawns (8 – 12) from one of the Blue Island Fish Markets

250gr. fresh Salmon from one of the Blue Island Fish Markets

30 ml Olive oil

Zest and juice of a lemon

Chives
-
1 clove garlic
-
1 spring onion
-
12 cherry tomatoes

Salt
-
Pepper
Instructions
Clean the Prawns, (this can be done at one of the Blue Island Fish Markets) score with a sharp knife to a depth of 2-3 mm. Then cut the salmon into cubes.
Put the salmon and prawns in a large glass dish, then mix in the olive oil, garlic, spring onion, salt, pepper, lemon zest, lemon juice and chives.
Cover the dish with cling film, refrigerate and leave the ingredients to marinate for 4 hours.
First moisten the metal or wooden skewers, then push on a prawn, a cube of salmon and a cherry tomato.
Put the skewers in a greased frying pan or grill on a medium to high heat.
Cook for 6-7 minutes, until the salmon can be pierced with a fork. Turn the skewers over halfway through the cooking.
