Ingredients

Quantity:
1 kg Whitebait or Mullet from one of the Blue Island Fish Markets
5 tablespoons olive oil
Oil for frying
3-4 cloves garlic, peeled and cut into four
2-3 sprigs rosemary
2 cups vinegar (+ ½ cup water, if more diluted vinegar is preferred)
1 1/2 - 2 teaspoons flour
Salt
Flour to coat the fish

Purchase the cleaned fish from one of the Blue Island Fish Markets.

Flour and fry the whitebait. Place on a deep dish, on absorbent paper and then season with salt.

Then sauté the garlic in the olive oil and add the rosemary. Mix the flour with a cup of vinegar in a deep bowl.

Add the mixture, along with the remaining vinegar (and water if desired), to the ingredients that are on the heat, season with salt and stir.

When the mixture comes to the boil, pour over it the fish, covering them.

Tip: Savoro can be made with medium size fish too.
