Ingredients

2 cod fillets from one of the Blue Island Fish Markets

Juice of 1½ lemons

2 cloves garlic

1 onion

2 hot peppers
-
1 teaspoon coriander (fresh or ground)

Salt

Pepper

4-5 slices of lemon to garnish

1/2 cup olive oil
Instructions
Wash the cod and leave it to drain. Season the fish with salt and pepper and drizzle with the lemon juice.
Heat the olive oil in a frying pan.
Peel and finely chop the onion, garlic and peppers, then sauté them in the frying pan for about five minutes.
Remove from the pan and spread half of the mixture on the bottom of a baking dish, add half the coriander, then add the fish and cover with the remaining mixture and the remaining coriander.
Bake the fish for 20-25 minutes at 200°C.
Serve on a platter and garnish with the lemon slices.
