4 Sea Bream fillets from one of the Blue Island Fish Markets

20 ml olive oil (4 tablespoons)

Dried thyme

For the sweet potato mash:

2 sweet potatoes, peeled and thinly sliced

2 carrots, thinly sliced

Fresh thyme

100 g vegetable margarine

150 g cream or soya cream

Salt

Pepper

Nutmeg

Instructions
Purchase the fresh Bream fillets, boned, from one of the Blue Island Fish Markets.
Cut the fillets into small pieces and sprinkle with salt, pepper, a little olive oil and finely chopped thyme. Wrap them with cling film and refrigerate to marinate for half an hour.
Boil the carrots and sweet potatoes in a saucepan with water. Add salt, pepper, nutmeg and turmeric. Cook for 25 – 30 minutes, until the sweet potatoes and carrots are tender. Drain the water and mash the ingredients with a masher. Add the cream and margarine. Stir well until smooth.
Arrange the fish fillets on a sheet of baking paper, close it and bake for 6 – 7 minutes in a preheated oven at 190°C.
Serve the fish with the mash.
