Ingredients

20 - 30 large, cleaned Prawns from one of the Blue Island Fish Markets

1 tub strained yoghurt

Spring onion, finely chopped

1 1/2 tablespoons sweet chilli sauce

1/2 - 3/4 tablespoon Sriracha sauce (a hot Thai sauce which can be found in supermarkets)

10 wooden skewers
Instructions
Stir together the yoghurt, spring onion, sweet chili sauce and Sriracha sauce in a bowl.
Wash the prawns and then marinate them in oil, salt and pepper.
Then, place the prawns on wet skewers; about 5 prawns on each skewer.
Finally, place the loaded skewers on aluminium foil in a baking pan and cook them in the oven at 250°C for 5 – 10 minutes (depending on the oven).
When cooked, brush the prawns with the sauce. Serve with lemon and fresh vegetables or with chips (French fries).
