Ingredients

8 Black Tiger Prawns from one of the Blue Island Fish Markets

250 g spaghetti

1-2 teaspoons Creole Seasoning (seasoning mix of onion, garlic powder, oregano, basil, thyme, black and cayenne pepper, paprika and salt) (it can be found in supermarkets)

2 tablespoons olive oil

2 tablespoons unsalted butter

1 onion, finely chopped

2 cloves garlic, crushed

2 tomatoes, finely chopped

2 teaspoons thyme
-
1 teaspoon smoked paprika

1/2 teaspoon chilli powder or cayenne pepper (optional)

1 cup vegetable stock
-
Juice of ½ - 1 medium size lemon

Salt
-
Pepper

Microgreens for garnish (it can be found in supermarkets)
Instructions
Boil the spaghetti according to the instructions on the pack, drain and put to one side.
Sprinkle the prawns with the seasoning. Then heat the olive oil over a medium heat in a large frying pan and sauté the prawns for 3-5 minutes, until they turn red. Keep them to one side.
Add 1-2 tablespoons of butter into the frying pan. Add the onion, garlic, tomatoes, thyme, smoked paprika and chili.
Cook for 3-4 minutes, stirring every now and then. Add the vegetable stock, lemon juice and cook for another minute. Season with salt and pepper and add the spaghetti and prawns.
Finally, stir to bring everything together and season with salt and pepper.
Turn off the heat and let the sauce get absorbed a little. Garnish with cherry tomatoes and microgreens.
Serve hot.
