1 kg Octopus from one of the Blue Island Fish Markets

1 clove garlic, cut in half

4 stars anise

1 piece ginger (4 cm), peeled and sliced

2 teaspoons olive oil

1/2 cup oyster sauce

1/3 cup soy sauce

1/3 cup white wine
-
1 tablespoon sweet chilli sauce

1/4 cup lime juice

1 cup green salad leaves

1/2 cup Edamame beans

1 small red onion, thinly sliced

1 orange, peeled and divided

1 cup noodles, cooked

Instructions
Purchase the cleaned Octopus from one of the Blue Island Fish Markets.
Dry the octopus in a colander.
Cook the noodles following the instructions on the pack.
Put the garlic, anise, ginger, olive oil, oyster sauce, soy sauce and wine in a large frying pan. Then add the octopus and put it over a high heat. Bring to the boil and cover with the lid, lowering the heat. Cook for about 1 hour. Turn it over after half an hour.
Remove the octopus from the pan and put it to one side to drain. Keep about half a cup of the stock.
Place the octopus in a baking dish and place on the grill. Drizzle with olive oil and allow to roast, turning every 10 minutes. Cut into pieces when ready and put to one side.
To prepare the sauce; mix the sweet chilli sauce, lime juice, salt, pepper and octopus stock. Stir until all the ingredients are well blended.
