Ingredients

2 Salmon fillets from one of the Blue Island Fish Markets

Olive oil

Salt

Freshly ground black pepper

Sesame seeds for garnish

Spring onion, finely chopped, for garnish

For the sauce:
-
4 tablespoons honey
-
2 tablespoons soy sauce
-
1 tablespoon white vinegar
-
1 large clove garlic, crushed
Instructions
Take the salmon fillets out of the refrigerator about 20 minutes before cooking.
Lightly wipe the fillets with kitchen paper and season with salt and pepper.
Put the soy sauce, vinegar, garlic, honey in a small bowl and whisk.
Drizzle a non-stick frying pan with olive oil and heat on a medium to high heat.
Put the salmon in the frying pan and cook for 3 minutes.
Turn them over and cook for another 2 minutes.
Pour the sauce over the salmon and cook for 1 minute until it starts to thicken slightly.
If the salmon isn’t quite cooked and the sauce has thickened, add 1 tablespoon of water.
Take the frying pan off the heat, transfer the salmon fillets to plates, drizzle with the sauce, sprinkle with sesame seeds and spring onion and serve.
