1 kg Squid from one of the Blue Island Fish Markets

6 large onions, cut into six

5 allspice berries

5 cloves

1 cinnamon stick

1 bay leaf

2 tablespoons red vinegar

Garlic powder

200 g tomato sauce

400 g brown rice

Salt

Instructions
Purchase the cleaned Squid from one of the Blue Island Fish Markets.
First, fry (sauté) the onions and garlic in very hot olive oil. When they have softened, add the squid and bring to the boil to reduce their liquid. Add the allspice, cloves, cinnamon, garlic powder and bay leaf and add the vinegar and water if necessary; then bring to the boil. Lower the heat and leave to simmer until soft, about 30 to 40 minutes.
Then add the tomato, remove the bay leaf and season with salt and pepper.
At the same time, in a saucepan, put the brown rice to boil, following the instructions on the packet. Serve as soon as the rice is ready and the sauce from the squid has thickened.
Tip: Brown rice needs more cooking time than white rice. It takes about half an hour, so as soon as the squid starts to boil, start cooking the rice.
