Ingredients

Quantity:
1 kg cleaned Striped Red Mullet from one of the Blue Island Fish Markets
4 cloves garlic, sliced
1/3 tablespoon fresh rosemary
3 tablespoons vinegar
70 all-purpose flour
200 g shortening with olive oil
Salt
Freshly ground pepper
1 lemon

Ask at the Blue Island Fish Market to clean the Mullet.

Rinse and drain the red Mullet. Season with salt and pepper and marinate in the lemon juice for 30 minutes.

Then flour the fish and fry them in a deep frying pan with the shortening.

Put 4-5 tablespoons of the shortening that was used to fry the fish into another frying pan and add the rosemary and garlic.

Finally, blend the aromatic oil left over from the fish frying and herbs with the flour, stirring until thick.

Dilute with the vinegar and a little water until it becomes mushy. Pour the mushy sauce over the Mullet and serve.
