18 large Prawns from one of the Blue Island Fish Markets

1 cup olive oil

Fresh rosemary

1 Juice of 1 orange

1 Juice of 1 lemon

Instructions
Wash and drain the prawns. We remove the shell, keeping the tail and head. They can also be cleaned at the Blue Island Fish Market.
Put the olive oil, orange and lemon juices, rosemary leaves, salt and pepper in a bowl (for the marinade).
Add the prawns (with the shells) to the marinade, cover with cling film and refrigerate for 2-3 hours.
Put the charcoal on the barbecue grill in a pile and light them. It takes about half an hour to be ready (glowing red, without giving off smoke). Wait a little while to let the intense heat go down, then place the prawns on the grill. During the cooking time, about 10 minutes, turn them over 2-3 times and brush with leftover marinade from the bowl.
As soon as the prawns turn a reddish colour, they are ready!
