Ingredients
-
1kg. Sardines from one of the Blue Island Fish Markets
-
15 small potatoes
-
1 tablespoon hot mustard (e.g. English)
-
2 Juice of 2 lemons
-
3/4 cup olive oil
-
4 cloves garlic
-
1 tablespoon rosemary
-
Salt
-
Pepper
Instructions
Ask at the Blue Island Fish Market for the sardines to be cleaned.
Peel the potatoes. Boil them for 10 minutes and then place them in a baking dish, add the garlic, rosemary, lemon juice, olive oil, salt and pepper, mustard and mix all the ingredients well.
Add water until it is about half way up the potatoes (about 1 glass). Bake in a preheated oven at 180°C for about 40 minutes or until soft.
Wash the sardines with plenty of running water and leave them in a colander. Sprinkle with salt and store in the refrigerator until the potatoes are ready. Pierce the potatoes with a fork and you can see that they are cooked, then place the sardines on top of each other in a layer, on top of the potatoes and let them bake for another 15 minutes or so, depending on your oven.
Bon appétit!
