Ingredients

1 kg various boiling fish, cleaned

400 g shrimps (optional), cleaned

1 cup olive oil for the sauce

2 carrots, grated

1 onion, finely chopped

1 onion, whole

sticks celery, finely chopped

2 cloves garlic, sliced

1 chilli pepper, finely chopped

1 tomato, grated

1/2 cup parsley leaves, finely chopped

1/2 cup olive oil

2 Juice of 2 lemons

1 cup rice (glacé or Carolina)

Instructions
Put the fish, prawns and the whole onion in a pan and cover them with water. Season with salt and bring to the boil. As soon as it is boiling, turn down the heat and allow it to simmer for approximately one and a half hours. Drain the contents, keeping the stock separate from the fish. Finely chop the fish and the prawns.
Sauté the chopped onion and garlic in the one tbsp olive oil in a pan. As soon as they get shiny, add the carrot, celery, chilli, tomato, and the lemon juice. Bring these ingredients to the boil and add the fish stock, salt, pepper and the rice.
After gently simmering for fifteen minutes, add the chopped fish and prawns, parsley and the rest olive oil. Boil for another five minutes and serve.
