Ingredients

15 Crabs from one of the Blue Island Fish Markets

1 1/2 packets pasta

2kg canned chopped tomato

2 cup stock (from the boiled crabs)

1/4 cup olive oil

2 onions
-
3 cloves garlic

1 small bunch parsley
-
10 basil leaves

Salt

Instructions
Wash the crabs thoroughly under running water. Then put them to boil in water, after adding a little salt, lemon, oil and a little parsley (to draw out the smell). Leave over a medium heat for about 20 minutes.
Remove the crabs and save the stock for the pasta and sauce.
Fry the chopped onions and garlic in a pan. Add the tomato, stock, salt, pepper and bring to a simmer.
Then, before removing the sauce from the heat, add the crabs, opened in the middle, to absorb sauce as well as the parsley and basil leaves.
Boil the pasta in slightly salted water, to which was added a cupful of stock from the crabs. After draining them, add them to the pan with the sauce and crabs.
Decorate with fresh parsley.
