Ingredients

1 kg large prawns from one of the Blue Island Fish Markets

For the sauce:

1 ripe tomato, finely chopped

2 tablespoon butter

3 tablespoons olive oil

1 pack Chorizo
-
2 tablespoons Raki (or other white alcoholic drink)

Salt
-
Pepper
-
Fresh Thyme
-
Water
-
For the rice:
-
2 cups (heaped) parboiled rice
-
1.5 litres water
Instructions
Ask at one of the Blue Island Fish Markets for the prawns to be cleaned.
Heat the olive oil and butter in a non-stick frying pan and when it is at the right temperature, add the peeled prawns, season with salt and pepper and let them brown.
Then finely chop the chorizo and the tomato and add them to the pan. Add the thyme and the water and let the sauce thicken.
During this time, boil the 2 cups of parboiled rice according to the instructions on the pack.
Serve by pouring the tomato sauce with the prawns and chorizo over the rice.
