Ingredients

1 Lobster, boiled, 800 – 1000 g from one of the Blue Island Fish Markets

For the cheese sauce:

40 g butter

40 g all-purpose flour

600 ml milk (warmed up)

110 g Cheddar cheese, grated

1 teaspoon mustard
-
1 pinch Cayenne pepper

Instructions
Boil water in a large saucepan and add the lobster. Lobsters need boiling for about 10 – 12 minutes per 500g.
Melt the butter in a saucepan over a low heat. Add the flour and stir until the mixture is smooth and doesn’t stick to the sides of the pan. Cook for 2-3 minutes until the flour and butter is a doughy ball.
Remove from the heat and slowly add the milk, stirring constantly to prevent lumps. Bring to the boil, stirring constantly, and simmer for about 5 minutes, stirring occasionally.
As soon as it becomes smooth and creamy, add the grated cheese little by little, stirring until it melts. If the sauce is too thick, dilute it with a little more milk.
Preheat the grill to hot.
Add the mustard, cayenne pepper and salt to the sauce.
Then cut the lobster in half horizontally in the middle. Place in a baking tray and pour the cheese sauce over both halves.
Cook the lobster under the grill until the cheese is golden and bubbling.
