6 large Striped Red Mullet from one of the Blue Island Fish Markets

Juice of a lemon

1 tablespoon mustard

1 shot Ouzo

1 clove garlic, crushed

1/2 cup olive oil

Rosemary

Salt

Freshly ground pepper
Instructions
Purchase the cleaned mullet from one of the Blue Island Fish Markets.
Rinse and drain the fish. Season them with salt and pepper and place them in a medium wide saucepan over a low heat.
Gently whisk the oil together with the mustard, garlic, ouzo and lemon juice in a bowl. Then pour over the fish and raise the heat to medium. Let the fish boil in the stock.
If necessary, add some warm water. Finally, sprinkle with rosemary, leave for another 2-3 minutes and serve.
