500 g Squid (large) from one of the Blue Island Fish Markets
1/2 cup Feta cheese, grated
1 medium size tomato, diced
3 tablespoons parsley, finely chopped
4 tablespoons olive oil
Salt
Pepper

Purchase the cleaned Squid from one of the Blue Island Fish Markets.

Wash the squid carefully, inside and out, and let them drain well.

Cut off their tentacles and lightly season with salt and pepper.

Preheat the oven to 200°C

Put the squid to one side and make the filling. Mix the feta cheese together with the tomato, parsley and olive oil and carefully stuff the squid to halfway. Close the openings with the tentacles, pushing them inward.

Brush the squid with olive oil.

Finally, grease the grill with olive oil and bake for about 15-20 minutes on each side on medium heat or in a grill pan for about 2 minutes on each side.
