1 κιλό kg Calamari from one of the Blue Island Fish Markets

1 Zest and juice of a lemon

Oregano
-
Salt

1/2 cup olive oil
Instructions
Purchase the cleaned (and cut into medium size pieces) Squid from one of the Blue Island FishMarkets.
Wash and drain the squid, or dry the pieces with kitchen paper.
Put a grill pan or normal non–stick frying pan on a high heat and cook the squid, for about 5minutes on each side.
Put the olive oil, lemon juice and zest in a bowl. Add salt and oregano and beat to blend together.
Place the squid on a platter and pour the sauce over it.
