Instructions
Purchase the cleaned calamari from one of the Blue Island Fish Markets. Ask the experienced staff to cut the calamari into pieces and to separate the heads from the bodies.
Wash and drain the calamari.
Put plenty of olive oil in a frying pan and fry the onion and spring onion until they start to turn golden brown. Add the finely chopped heads and tentacles, rice, raisins, pine nuts, salt, pepper, a little cinnamon, sugar and finally the dill. Stir well, adding a little water.
Stuff the squid bodies with the filling and place them in a low wide saucepan, drizzled with olive oil. Add half a cup of water and cover with a plate. Cook over a medium heat for 20-30 minutes, adding a little more hot water if needed.
