2 Tuna fillets from one of the Blue Island Fish Markets

2 tablespoons olive oil

1 tablespoon balsamic vinegar

1 tablespoon lemon juice

Salt

20 g black peppercorns

Slices of lemon or lime

Instructions
In this recipe the tuna is raw, so it is very important to ensure that the fish is absolutely fresh. Purchase fresh tuna from one of the Blue Island Fish Markets.
Wrap the tuna tightly with cling film and put it in the freezer for 3 hours until it is almost frozen. In this way the fish can easily be cut into very thin slices.
Take out from the freezer and remove the cling film. Place the tuna on a cutting board and with a very sharp knife cut slices that are as thin as possible. Then lay them out on a serving dish.
Mix the olive oil with the lemon and vinegar in a container with a lid. Brush the fish slices and season with salt. Crush the peppercorns into big pieces and spread them out on a plate. Press the fillets into the pepper, making sure the grains stick all over.
Sprinkle with sesame seeds and serve with lemon or lime slices.
