Ingredients

1 kg Prawns from one of the Blue Island Fish Markets

1/4 cup olive oil

1 clove garlic

1 onion, finely chopped

1 red pepper, finely chopped

1 yellow pepper, finely chopped

2 cups rice
-
2 tomatoes, finely chopped

2 tablespoons parsley, finely chopped

4 cups water

Tabasco sauce (optional)

Salt

Freshly ground pepper
Instructions
Purchase the cleaned Prawns from one of the Blue Island Fish Markets.
Heat the olive oil in a deep frying pan with a lid and sauté the onion, garlic, and peppers for 3 – 4 minutes (they shouldn’t change colour). Then add the rice to get oily and stir.
Then add the tomatoes, water, salt and pepper, reduce the heat, half cover the pan and simmer over a low heat for about 10 minutes or until the rice is cooked.
Finally, add the prawns, and the parsley. Stir and simmer for a further 5 minutes. Add a little Tabasco sauce if so desired.
