Ingredients

1 kg medium size Prawns, cleaned, from one of the Blue Island Fish Markets

2 tablespoons + 6 tablespoons unsalted butter

Coarse salt

Freshly ground black pepper

5 cloves garlic, crushed

1/4 cup chicken stock

Juice of a lemon

2 tablespoon parsley, finely chopped
Instructions
Purchase the cleaned Prawns from one of the Blue Island Fish Markets.
Melt the 2 tablespoons of butter in a large frying pan over a medium heat. Add the prawns and season with salt and pepper.
Then cook for 2-3 minutes, turning the prawns occasionally, until they go a nice pink colour.
Remove the prawns from the pan and set them aside.
Then add the garlic and cook for about 1 minute, stirring constantly, until it gives off its distinctive aroma. Add the chicken stock and lemon juice and stir.
Bring to the boil, then lower the heat and cook for 1-2 minutes, until the stock is reduced by half.
Add the 6 tablespoons of butter, one tablespoon at a time, stirring constantly, until it is all melted.
Add the prawns to the frying pan and shake gently to mix the ingredients.
Garnish with chopped parsley and serve immediately.
