Ingredients

4 Amberjack fillets (about 200 g each) from one of the Blue Island Fish Markets

2 tablespoons olive oil

Salt

Freshly ground pepper

For the garlic sauce:

2 loves of garlic, crushed

60 ml olive oil

40 ml lemon juice
-
Freshly ground peppe

1 tablespoon parsley, finely chopped
Instructions
Lightly oil and season the fillets with salt and pepper. Heat a non-stick frying pan over a medium heat and fry the fish for about 2 minutes on each side.
To make the sauce, use the same frying pan to heat about ⅓ of the olive oil, then sauté the garlic over a low heat. Add the lemon, pepper, and the remaining olive oil.
Drizzle with the garlic sauce and garnish with the parsley.
Serve.
