Ingredients

1 Striped Bream, of about 1.5 kg, from one of the Blue Island Fish Markets

2 sprigs rosemary

4 sprigs fresh oregano

2 sprigs sage

1/2 cup olive oil

1 cup fine salt
Instructions
Purchase the cleaned fish from one of the Blue Island Fish Markets.
Wash the fish. Put the herbs in the belly and cover all the outside of the fish with salt.
Adjust the height of the grill to 15 – 20 cm above the charcoal.
Place the fish in a closed grill to be able to turn it over easily.
After about ten minutes, the salt will form a crust. Lower the grill to 5 – 10 cm above the charcoal and cook the fish for about 10 – 12 minutes, turning the grill often.
Place it on a large platter and drizzle with olive oil.
Tip: Bream or Sea Bream can also be used in this recipe.
