Ingredients

Quantity:
1 medium size Striped Bream from one of the Blue Island Fish Markets
1 pack frozen okra
1 large tomato, sliced
2 tablespoons garlic, finely chopped
2 tablespoons balsamic vinegar
3/4 cup olive oil
Juice of 2 lemons
1/2 teaspoon fresh coriander, finely chopped
Salt
Pepper

Purchase the cleaned fish from one of the Blue Island Fish Markets.

Preheat the oven to 180°C (fan).

Place the fish in a large oven proof glass dish or baking tray and empty the okra all around. Add 1 cup of water, balsamic vinegar, lemon juice, coriander, chopped garlic, salt and pepper. Cut the tomato into rings and cover the fish with it. Cover the dish with aluminium foil and bake the food on the middle shelf of the oven for about 1 hour.

Take the tray out of the oven, remove the foil and bake for another 15 -20 minutes, so that the food gets browned a little.

Serve hot or at room temperature.
