Ingredients

2 Sole fillets from one of the Blue Island Fish Markets

Zest and juice of 2 large lemons

2 shots Ouzo

1/2 cup water

Mustard powder

Olive oil

Salt

Pepper
Instructions
Dry the fillets on kitchen paper and then lay them out on a large ovenproof dish.
Dissolve as much mustard powder as desired in olive oil.
Preheat the oven to 180°C.
Then season the fillets with salt and pepper, add the Ouzo, mustard, lemon zest and juice, and the water.
Bake for 12 to 15 minutes at most, taking care not to let the fish get dry.
