Ingredients

2-3 Atlantic Mackerel from one of the Blue Island Fish Markets

1 pack tomato purée

Salt

Pepper
-
Basil
-
2 tablespoons green olives, stones removed

1 bay leave

2 cloves garlic, finely chopped

4 tablespoons olive oil

White wine
Instructions
Purchase the cleaned fillets from one of the Blue Island Fish Markets.
Wash the fillets and leave to drain on kitchen paper. Season with salt and pepper.
Lightly sauté the garlic in a deep-frying pan. Add the tomato with the olives and then the basil, salt and pepper and the bay leaf. Dilute with wine and cook on a low heat for 10 minutes.
Add the fish to the sauce. Cook on a low heat for another 10 minutes. The fish is cooked when the sauce has thickened.
