Ingredients

1 large Grouper from one of the Blue Island Fish Markets

Olive oil to baste the fish

2 Juice of two lemons

2 pinches of salt

1 pinch of freshly ground pepper
Instructions
Purchase the Grouper cleaned from one of the Blue Island Fish Markets.
Wash and drain the Grouper. Score the thick parts diagonally or along the backbone from both sides.
Season with salt and add olive oil, lemon juice and pepper.
Heat the grill well and grease it with oil before putting the fish on.
Cook for about 15 minutes on each side depending on the size of the fish, until the skin starts to get some colour. Approximately 30 minutes of cooking will be needed.
