4 large fresh Atlantic Mackerel from one of the Blue Island Fish Markets

1/2 head garlic

1/2 cup olive oil

1 1/2 lemon juice

Lemon slices

Salt
-
Pepper

Oregano
Instructions
Wash the fish, place them in a baking dish and score them vertically on one side.
Place a coarsely chopped clove of garlic in the belly of each fish. Drizzle with the lemon juice and sprinkle with more coarsely chopped garlic.
Season with salt and pepper and add half a slice of lemon to each cut on the fish. Sprinkle with oregano, drizzle with olive oil, and add half a cup of water.
Tip: The recipe is just as tasty using fresh Chub Mackerel.
