4 fillets fresh Salmon or Tuna from one of the Blue Island Fish Markets
4 large mushrooms
8 cherry tomatoes
1 teaspoon mixed herbs
4 tablespoons olive oil
Salt
Pepper
Courgettes
Wooden Skewers

Purchase the fish without bones from one of the Blue Island Fish Markets.

Preheat the oven to 250°C.

Cut the fish fillets into square pieces.

Wash the courgettes and cherry tomatoes. Then cut the courgettes into square pieces. Next, rinse the mushrooms and cut each one into 4 pieces.

Put all the ingredients in turn onto the skewers. Place in a baking pan, drizzle with olive oil and add salt and pepper. Then bake in the oven for 10 to 15 minutes. Finally, turn them over and leave in the oven until cooked on the other side.

Serve sprinkled with lemon and accompanied by baked potatoes or chips (French fries).
