Ingredients

15-20 medium size Prawns, cleaned, from one of the Blue Island Fish Markets

1/2 pack of filo pastry

One pack of crab sticks, cut into cubes

1 onion, finely chopped

2 tomatoes, seedless, cut into small cubes

Baby carrots, cut in half
-
Feta cheese (10 cubes)

1/2 shot glass of Ouzo

Οlive Oil

Salt

Instructions
Fry (sauté) the onion in a deep pan using a little olive oil. Add the carrots, tomatoes, prawns, salt and pepper. Douse with the ouzo. Let the prawns cook in their own juices until they have evaporated. Next, add the crabsticks and set the mixture aside to cool.
Next, cut the filo pastry into squares. Coat the pastry squares with olive oil and add a tablespoon of the mixture in the centre of the pastry. Place a square of feta cheese and wrap up into a pouch. Place in a greased dish.
When they are all ready, drizzle with a little butter and bake in a pre-heated oven at 170oC until golden brown. Serve the pouches hot for maximum enjoyment.
Tip: These pouches are just as tasty with mussels.
