Quantity:
1 fresh Bream, filleted, from one of the Blue Island Fish Markets
20 g butter
70 g cream (low fat)
1 Zest and juice of a lemon
1 tablespoon flour, dissolved in a little water
1 Yolk of an egg
Parsley
Salt
Pepper

Preheat the oven to 230°C.

Cover an ovenproof dish with aluminium foil and put baking paper on top. Place the fillets in the dish and brush with olive oil.

Bake in the oven for about 10 minutes or so, depending on the oven.

Melt the butter in a non-stick frying pan, add the cream, lemon juice, lemon zest, egg yolk, saltand pepper. Stir gently.

Once the fillets are cooked, remove them from the oven dish using a spatula and place them in the pan to blend with the sauce.

Serve with chopped parsley.
