800 g cleaned Smelt

3 onions, thinly sliced (rings)

Flour mixed with salt and pepper, for the flouring (coating)

Olive oil for frying

3 tablespoons lemon juice

Salt

Freshly ground pepper
Instructions
Rinse the fish and let them drain first in the strainer and then on a paper towel.
Drizzle with lemon juice and season with salt and pepper. Place them on a glass or plastic platter.
Put the onion rings into a large pan and boil them with a little water over a very low heat, until tender.
Flour and fry the smelt in another frying pan, in hot oil. Drain on absorbent kitchen paper.
When the onions have softened, pour on 3-4 tablespoons of oil and stir. Place the fried smelt on top and turn off the heat. Let them stand for a while, so that the fish and onion flavours blend together.
Smelt should always be served hot!
