Ingredients

1 kg Octopus, cleaned, from one of the Blue Island Fish Markets

1 clove garlic

2 tablespoons balsamic vinegar

1 pinch oregano

4 tablespoons olive oil

1 bay leaf

Pepper

2 large sheets of baking paper

2 large sheets of aluminium foil
Instructions
Purchase the cleaned octopus from one of the Blue Island Fish Markets.
Wash, drain and place the octopus in a basin.
Next, add the olive oil, balsamic vinegar, bay leaf, garlic, pepper and the oregano. Stir the octopus and all ingredients well.
Lay out the two sheets of aluminium foil in a cross shape on the work surface, then on top of them lay out the two sheets of baking paper, also in a cross shape. Next, place the octopus in the centre and pour the mixture over it. Finally, wrap the aluminium foil into a packet. Not too tight because of expansion while cooking.
Bake in a pre-heated oven at 180oC for about one and a half hours, depending on the oven.
