2 fresh Bream fillets from one of the Blue Island Fish Markets

300 g processed tahini

Olive Oil

20 g parsley, finely chopped

5 sumac

2 medium size onions, sliced

50 g butter
-
3 sprigs rosemary

10 g brown sugar

Coriander leaves
Instructions
Purchase the fresh fish fillets from one of the Blue Island Fish Markets.
Marinate the fillets in olive oil and parsley.
Then brush them with tahini and bake them in a preheated oven at 180°C for 10 minutes or until the bream is cooked. Then put the butter in a frying pan, add the onions and rosemary and simmer until golden brown. Add the sugar and cook until caramelized.
Serve the bream with the caramelized onions on top.
Garnish with coriander leaves and sumac.
