Ingredients

4 bream fillets

1 teaspoon Dijon mustard

1/2 glass breadcrumbs

3 tablespoons almond flakes

1 tablespoon fresh ginger

1 tablespoon saffron

1/3 bunch fresh coriander

1/3 bunch of parsley

1 Zest of 1 orange

1/3 teaspoon salt

1/3 teaspoon ground black pepper
Instructions
Using a blender, mix the breadcrumbs, parsley, coriander, saffron, orange zest, ginger, salt and pepper. Put this mixture in a bowl and add the almonds, breaking them up and mixing it all together using your hands.
Drizzle a baking dish with olive oil, lay in the fish fillets with the skin side down. Brush the fish with mustard, top with the breadcrumb mix and press lightly to stick the mixture to the fish.
Bake in a preheated oven at 200°C for 12 to 15 minutes.
Serve with rice and butter sauce.
