Ingredients

4 Sea Bass fillets(without skin)

Juice of 1 lime

Zest of 1 lime

1 tablespoon olive oil

1 tablespoon Ouzo

Juice of 1 lemon

1 tablespoons fresh coriander, freshly chopped

1/2 teaspoon sweet paprika

Sea salt

Pepper

Ingredients for the Papaya Salad:
-
1 sweet red pepper, diced
-
1 papaya, diced
-
1 tablespoon tablespoon chives, finely chopped

1 tablespoons olive oil

Sea salt
Instructions
Purchase the freshly cleaned Sea Bass fillets from one of the Blue Island Fish Markets
Dice the fish. Then put it in a container and add the zest and juice of the lime, lemon juice, olive oil, egg, coriander, paprika, salt and pepper. Stir gently and cover the container with cling film. Refrigerate for 15 to 20 minutes.
For the Papaya Salad:
Put the papaya, pepper and chives in a bowl. Add the olive oil and sea salt.
Put the papaya salad on a plate and the sea bass tartare on top.
Serve.
